Enchilada Casserole

 Bake frozen, covered at 350 for one hour or until bubbly. Remove cover for last 5-10 minutes to brown cheese, if desired.

Loved the corn tortillas and Ginny's trick of spraying the cover with PAM before cooking worked like a charm. No cheese on the cover only on my enchilada.

we definitely like this better fresh, but not more than I love the convenience!
