This Friday at Ginny's House

Just wanted to remind everyone that we will be gathering at my house at 9:00 am this Friday, July 10.  I will be getting meat prep assignments out to most of you today or tomorrow.  If you will please bring those and any large bowls and other kitchen tools you feel might be helpful (Jenna, will you bring your electric can opener?), it would be much appreciated.  I am looking forward to it!

In case you were wondering, these are the meals we should each be leaving with by the time we are done.

Caesar Chicken Casserole
Manicotti
Enchilada Casserole
Teriyaki Chicken Marinade
Stromboli
Chicken Fajitas
Ham and Creamy Potatoes
Lasagna
Ranch Chicken and Rice
Taco Salad
Chicken Pot Pie
Honey Mustard Chicken
Italian Chicken
Sloppy Joes
Pot of Gold
Pulled Pork

Chicken Pot Pie

 Cook frozen for 1 hour or until crust is browned and sauce is bubbly.


Taco Salad

Warm up mixture on stovetop (add diced tomatoes at this point if you want them warmed).  Serve on top of Fritos and garnish with olives, sour cream, cheese, chopped tomatoes, shredded lettuce, etc.

Ranch Chicken and Rice

 Place chicken and sauce in crock pot, cook all day on low.  Serve over prepared rice.

Lasagna

Cook frozen, covered at 400 for 1.5 hours

Honey Mustard Chicken

 Thaw in fridge and move chicken around periodically to marinade.  Grill as desired or bake in oven for 12 minutes on foil-lined and sprayed baking sheet (can roll in bread crumbs or croutons to make more like chicken nuggets).  I like to make additional sauce for dipping.  (¼ cup each brown sugar and OJ concentrate, 1 T. each Dijon mustard and honey)

Ham and Creamy Potatoes

 Thaw, Cook at 350 for 1.5 hr

Sloppy Joes

 Heat through and serve on hamburger buns.

Chicken Fajitas

Cook meat and veggies in skillet. Add to tortillas with sour cream, salsa and cheese.

Pot of Gold

Thaw and heat sauce.  Serve over prepared egg noodles.

Stromboli

 Thaw and let rise.  Brush egg yoke over top of dough prior to cooking.  Bake at 375 for 25-30 min.  Let stand 5 min then cut on angle. Dip in marinara sauce if desired.


Italian Chicken

 Place chicken and sauce in crock pot, cook on low 6-7 hours. Serve over prepared egg noodles (also good over rice).

Teriyaki Marinade

Thaw in fridge, working marinade around chicken periodically.  Grill as desired.

Pulled Pork

 Combine pork and BBQ sauce and heat in sauce pan or crock pot. Serve on hoagie rolls.


Enchilada Casserole

 Bake frozen, covered at 350 for one hour or until bubbly. Remove cover for last 5-10 minutes to brown cheese, if desired.

Caesar Chicken Casserole

 Thaw. Top with crushed croutons and bake at 350 for 30 minutes or until topping is browned and casserole is bubbly.

Manicotti

Manicotti – Bake at 350 for an hour or until hot and bubbly.

Pulled Pork

Same as last time

Teriyaki Marinade

Thaw in fridge. Grill until meat is no longer pink.

Philly Cheese Steak Sandwiches

Thaw in fridge. Cook meat slices, peppers and onion all at once. Stir the mixture lightly as it cooks. Cook until meat is no longer pink and onions are clear. Be careful not to overcook the meat as it will make it tough. Salt and pepper the mixture to taste. Lightly toast hoagie buns. Let the heat from the meat melt the cheese, or put each sandwich in the microwave for 20 sec.

Chicken Cordon Bleu

Cook frozen @ 400 for 1 1/2 hours

Hawaiian Haystacks

Thaw and heat through. Top with chow mein noodles, grated cheese, tomatoes, green onion, celery, coconut, or pineapples chuncks

Baked Beans

Defrost and heat in saucepan over medium heat until bubbly

Caesar Chicken Casserole

Thaw casserole. Top with crushed croutons and bake @ 350 for 30 min or until topping is browned and casserole is bubbly

Stuffed Peppers

Bake @ 425 for one hour. Uncover peppers and bake for 20 more min

Chicken Parmesan

Cook frozen and covered with foil @ 400 for 1 1/2 hr

Marinated Chicken with Mango Salsa

Thaw chicken and mix marinade around. Cook on grill until desired doneness. Top with thawed mango salsa

Chicken Quesadillas

Preheat oven to 375. Do not thaw. Plave quesadillas on the cookie sheet straight from the freezer and bake for 15-20 monutes or until cheese is fully melted

Pasta Salad

Remove from freezer 4 hrs before serving

Steak Marinade

Thaw meat at least overnight in the fridge. Turn bag to move marinade around the meat as it thaws. Grill on charcoal or gas grill to desired doneness.

Southwest Rice Casserole

Thaw and bake for 25-35 min @350

Farmer's Casserole

Cook covered with foil @400 for 1 hr

Manicotti

Bake @ 350 for 30 min or until hot and bubbly

I heart food group!!!


This picture makes me so giddy- meals at my fingtertips. I had a great time today with everyone, talking, working and laughing together. Filling my freezer with great meals made it even more exciting. Jenna and ChrisAnne-thank you so much for all the work you did in preparation for today. It really made things go extremely smooth. All the recipes look delicious and the price is awesome too!!!

Huge thanks to McCall and Jen for making this all happen. I can't believe we came home with 19 meals completed in 6 hours (I even split my S&S chicken, taco soup and potatoes in half because they were double what we could eat in one sitting). Below is the money breakdown. Please write your checks out to Jan Argyle and give to Jen or McCall. Everyone's amounts are different due to what they contributed. Thaw, warm and serve. May add sour cream or chips

BBQ Pulled Pork

Add BBQ sauce (in small ziploc) to pork according to taste. Serve over toasted hoagie rolls.

Creamy Italian Crock-pot Chicken

Cook in crock pot until chicken isn't pink. Serve over rice or noodles

Hammy mac and cheese

Bake at 350 for 1.5 hr

Steak fajitas

Thaw. Cook in skillet with fajita seasoning. Serve in tortilla with cheese, sour cream and salsa

Paremean Ranch chicken (x2)

Bake 40 min at 350. Or Jenna posted: "I thawed it first, lowered the temp to 325 and baked for 1hr - 1hr 15 min. It was tender and yummy!"

Sweet and Sour Chicken

Thaw and heat until bubbly. Then serve over rice.

White Bean Chili

Thaw, Warm and serve

Chicken Pot Pie

Bake frozen and uncovered at 350 for 55 min. Cover the edges with tin foil to prevent burning of crust

Zitti Bake (x2)

Bake Frozen for 2 hours at 350

Chicken Broccoli Bake (x2)

Thaw and bake covered at 350 until hot and bubbly. Remember to add the bread crumbs to top (in small baggie). About 1-2 hours

Out of Food!!!

Jen and McCall are getting geared up to host our next Freezer Meal Group. They have planned January 23rd at 9am at Jen Morton's. If anyone has conflicts let them know as soon as possible so we can work it out. They have some very yummy meals planned like pulled pork and white bean chili. Mmmmmmm! The full menu will be posted soon, so stay tuned. Also look for food prep assignments to increase efficiency for the assembly day. I can't wait to see everyone again and make some tasty food.
